Vineyards, the calm of the surrounding countryside and wine made just a few steps from the table. This is the setting of Semillon – a fine dining restaurant at the Predium Winery. Behind its kitchen is Michelin-experienced head chef Roman. He builds on quality ingredients, clean flavours and a modern take on Slovak gastronomy.

Table settings that let the food shine

The tasting menu at Semillon is built on clean compositions and thoughtful presentation. That is why the white Chic Relief plates serve as a neutral canvas that lets the colours, textures and details of each course stand out. They are complemented by the Living cutlery from Sola Switzerland. Its simple, elegant design doesn't distract from the overall impression of the service and fits naturally into the restaurant's modern character.

When the season sets the menu

Traditional flavours take on a new form at Semillon. Roman doesn't want to change them beyond recognition – he would rather find ways to present them in a modern way while keeping what makes them so familiar. He creates the tasting menu according to the season, the ingredients available and his current inspiration. Guests don't know in advance exactly what will arrive at the table. Over the course of the evening, 12 to 14 courses await them, gradually revealing the kitchen's current signature.
